Panko Breaded Fish Nuggets

I’ve been trying to work more fish into our dinner rotation. But some of the recipes out there are not exactly family-friendly.

These panko breaded fish nuggets are perfect for kids of all ages. They’re light and crispy and just the right amount of flavor to please the picky eater and the adult.

The first time I made these, my kids devoured them.

My picky daughter even asked for seconds.

Tips for making this cod nuggets recipe

• Let your kids help! Give them a bag of panko crumbs and let them shake the nuggets.
• If they are old enough, they can even flip the fish inside the pan.
• Make sure to let them cool slightly on paper towels. This will help with excess oil.
• If you don’t have coconut oil, feel free to sub with whatever you have on hand.

Below is our recipe for panko-breaded fish nuggets. Feel free to print it for easy reference.

Panko breaded fish recipe

Quick and delicious breaded cod recipe. Kids will love helping to make them and eating them!

Prep Time 10 minutes

Cook Time 20 minutes

Total Time 30 minutes

Ingredients

• 1 lb. Cod cut into pieces, about 1 inch long.
• 3/4 cup All-Purpose Flour
• 3/4 cup Panko Bread Crumbs
• 3/4 cup Parmesan Cheese
• 3/4 teaspoon Oregano
• 1/2 teaspoon Salt
• 2 Eggs lightly beaten
• 1/2 cup Coconut Oil

Instructions

1. Place Flour in a gallon Ziploc baggie.
2. Combine Panko bread crumbs, Parmesan cheese, Oregano, and Salt into a second Ziploc baggie.  Shake to combine.
3. Melt Coconut oil in a large non-stick skillet over medium-high heat.
4. While the oil is melting, place a handful of fish pieces into the flour bag.  Shake to coat. 
5. Shake off excess flour and dip fish into eggs to coat.  Make sure the excess egg drips off.
6. Transfer to the Panko mix bag.  Shake until well covered.  
7. Repeat until all of the fish pieces are completely covered in the Panko mix.
8. Arrange pieces in the hot skillet and fry until golden brown.  About 5-10 minutes, depending on the thickness.
9. Flip and cook for an additional 5-10 minutes, or until golden brown.  For extra-thick pieces, you may need to rotate a 3rd or 4th time.
10. Once browned on all sides, place pieces on a paper towel lined plate.

Yellow Foods List

1. Pineapple Rings.

Grab a can of pineapple rings. Blot off the extra juice and dust with some cinnamon sugar. Serve them whole or in smaller slices

2. Yellow Veggies and Ranch

I used yellow carrots, tomatoes, and peppers. Tip for picking out bell peppers: female peppers are sweeter. Look for 4 bumps on the bottom. These are better for eating raw.

3. Cornbread and Honey

Head to the bakery and find a loaf or giant muffins to cut up for the kiddos.

4. Lemon Jell-O Jigglers

These fun little treats are sure to be a favorite. Just mix one standard box of Jello into 1 cup boiling water. Pour into a small glass container and chill for at least 4 hours. To keep the portions small use a small cookie cutter, or raid the playdoh toys for small shapes! You use a lot less water to make them jigglers so keep that in mind when picking how much to make.

5. Tortilla chips with melted cheese

Yellow corn chips topped with some delicious melted cheddar or American cheese.

6. Bananas

Just cut up a banana for a quick yellow snack.

7. Banana pudding

Whip up a batch of banana pudding. Yum!

8. Lemons

This tart snack will test your preschooler’s tastebuds. Don’t forget to grab a picture of the pucker.

9. Lemonade

Wash down the yellow snacks with some lemonade.

10. Sweet Corn

Cut it off the cob, or let the kids nibble it as is!

11. Hard-Boiled Eggs

The yellow yolk may not be their favorite part of the hard-boiled egg. But at least it’s teaching them about the color!

Blueberry on skewers helps to keep little fingers out of your fruit bowl. You can even spring for blue toothpicks!

Grab a bag of blue corn chips and pair it with queso. You can whip up some non-spicey queso by combining 1 slice of white American cheese to every 2oz of heavy cream. Warm slowly adding the cheese one slice at a time.

Color your cream cheese with gel dye, so that it doesn’t change the consistency. A little goes a long way!

I can’t believe that the Fourth of July is almost here! That means it’s time to start preparing some crowd-pleasing fourth of July party recipes. Today I’m sharing some of my favorites to serve at parties.

I am someone who loves to throw parties for one simple reason – the food menu. Cooking up as many crowd-pleasing recipes as possible is my specialties. Red, White, and Blue Cookie Bars

4th of July is a great holiday to celebrate with kids. From the amazing fireworks, the patriotic crafts, and the delicious BBQ food. There is so much fun to be had!

My go-to dessert to bring to a 4th of July BBQ is our cheesecake spread paired with strawberries & blueberries. But I thought I would step it up a notch this year and make something that is a bit more involved.

These red, white, and blue cookie bars are festive and delicious. So they will look amazing at the dessert table of any party.

Red, White, and Blue Cookie Bars

These dessert bars are perfect for a 4th of July party or Memorial Day BBQ!

Prep Time 10 minutes

Cook Time 30 minutes

Total Time 40 minutes

Ingredients

Cookie Bars

• 1 cup unsalted butter (softened)
• 4 oz cream cheese (softened)
• 1 ¾ cups sugar
• 2 large eggs + 1 egg white
• 2 teaspoons vanilla extract
• 2 ½ cups unbleached flour
• ½ teaspoon baking powder
• 1 teaspoon salt
• Holiday Sprinkles

Frosting

• ¾ cup unsalted butter (softened)
• 2 cups powdered sugar
• 1 teaspoon vanilla extract
• ¼ teaspoon salt

Instructions

1. Preheat oven to 350 degrees.
2. Combine butter and cream cheese with an electric mixer.
3. Add sugar and mix well.
4. Mix in the egg and the vanilla.
5. Add in the flour, baking powder, and salt.
6. Mix well until the dough forms.
7. Fold in holiday sprinkles (I used about ½ cup. You could do more or less).
8. Line a 9x13 baking dish with parchment paper and lightly spray with cooking spray.
9. Spread batter into pan.
10. Bake for 30 - 35 minutes (time may depend on how thick your dough is).
11. Remove from oven and let cool completely.
12. While the cookie is cooling, make the frosting (directions below).
13. Once the cookie is cooled, remove from baking dish and frost.
14. Garnish with holiday sprinkles and cut into squares or bars.

My daughter loves to bake. Any chance she has to pull out the cookbook and pick a recipe she is thrilled. However, some days I just want easy. Easy prep. Easy recipe. Most importantly easy cleanup!

• Make sure to get as much of the chocolate to drip off the cracker before setting it on the parchment paper. I like to tap the edge of the fork on the bowl a few times.

White Chocolate Spring Treats

These sweet treats are super easy and your kids will love making them!

Ingredients

Ingredients

• White Melting Chocolates
• Mini Peanut Butter Sandwich Crackers
• Sprinkles

Supplies

• Parchment Paper.
• Fork and Butter Knife.

Instructions

1. Melt your chocolates on a double boiler, or in short increments in the microwave.
2. Drop a few cracker sandwiches into the melted chocolate.
3. Using your fork, flip each cracker and press them down into the chocolate.
4. When they are completely covered lift them out with your fork. Make sure to let as much extra chocolate drip off as possible.
5. Then, using your butter knife, slide the cracker onto a piece of parchment paper.
6. Use sprinkles, dots, or colored white chocolate drizzles to decorate your treats!
7. Place them in the fridge to speed up the setting time of the chocolate.

Notes

Refrigerate these spring treats in an air tight container.

Easter Cookie Truffles

I have a massive sweet tooth. My kids have learned to guard the desserts in our house because they have been known to disappear after bedtime or while the kids are in school.

My biggest weakness? Chocolate. To be exact, chocolate sandwich cookies. Specifically Newman-Os. Seriously, they’re like Oreos…but better.

This super easy cookie truffles recipe is made with chocolate sandwich cookies. You can use Oreos, Newman-Os, or generic.

Dip the balls in fun pastel-colored chocolate and you have an Easter treat that kids will love…and you’ll want to create a secret stash.

Ingredients for spring cookie balls

• Chocolate Sandwich cookies (Either a 15.25oz pkg of Oreos or 2 8oz pkgs of Newman-Os)
• 8 oz cream cheese, softened
• 6 oz vanilla almond bark
• food coloring of your choice
• sprinkles of your choice

How to make these Easter treats

Process the cookies in a food processor until fine.

Mix the crumbs with cream cheese until well-blended.

This works best with your hands, so you know the kids will want to help with this step.

Form mixture into 1-inch balls and place them in a container that can be put in the freezer.

Place truffles into the freezer for 30 minutes.

Prepare almond bark by heating it in the microwave for 30-second intervals until it is melted completely
and smooth.

Separate the melted bark into as many dishes as you have colors. Add food coloring to each dish.

Using a spoon, cover each truffle completely. 

Add sprinkles before almond bark hardens. Store in the refrigerator.
