It’s just another week night dinner. You make the same old thing from your arsenal, at least that’s how it goes in our house!! Every once in awhile you bring in something new, but if it isn’t easy and quick it wont make it to the rotation. Boy do I have a food muse for you today! This is sure to make the cut!!
Lets get started.
You don’t need much for this side, just think BLT!
I use 1/3c of diced tomatoes, one handful of spinach, and one slice of bacon per serving.
I am making 3 servings today.
Start by browning your bacon on medium heat.
Then toss in the tomatoes and turn off the burner.
(did you catch that spoon trick?)
Then top with all of your spinach.
With tongs, slowly toss to coat as the spinach wilts.
Then serve it up!
From start to finish, including prep time, this only take 15 minutes!
Now that’s a go-to side dish.
Soon I will be pulling the tomatoes and spinach right out of the garden.

Spinach is my go to when I need something filling and easy for dinner. I'm going to add this to the menu next week on a day when we have a lot going on and I need a quick, but satisfying meal.

It is a perfect quick side dish. Also a good way to use up a good amount of spinach if it's been in the fridge awhile.

Oh this looks wonderful! I love the slightly wilted spinach. Kelsey's used to make hot bacon dip for a spinach salad like this....drooooool

We love sauteed spinach as a side dish. Add bacon and I think my hubby would LOVE it even more :)
