Buckeye Bites

Buckeyes… Buckeye Bark… Buckeye Bites!

Have you ever attempted to make Buckeyes? It is a sweet, yummy, peanut butter, and chocolate treats. So yummy, yet when you try to make them you want to rip your hair out!!!!
A few years back, after a request from my husband (a huge Ohio St. fan), Kate and I attempted to make buckeyes. I found a recipe that seemed easy enough on Pinterest. Ha, was I WRONG!! I don’t have pictures, but they weren’t cute… They tasted good, but they didn’t look like the picture, they took A Lot of work and were frustrating.

Last year I upped my game and found a new recipe… Buckeye Bark.

Found on Pinterest again, this was a much less stressful way to get the taste of a Buckeye. They are by far the easiest of the three. One problem is they are always soooo messy to eat.

This year since the Buckeyes made it into the first NCAA Football Playoffs I knew I had to solve my problem… So Buckeye Bites were born.
These take a little time to make but are easy. Most of the time is chill time.

What you will need:

1 cup (Half a standard-sized jar) Peanut Butter
1 cup powdered sugar
2T melted coconut oil (or butter)
1t vanilla
8oz chocolate (I used chips)
Parchment Paper
Mix the first 4 ingredients together.
Place the Peanut Butter mixture in log-like shapes on paper. They might spread a bit.
Chill for about 15mins then roll to shape
Chill for at least 45mins.
Before removing the peanut butter logs from the freezer, melt 8oz of chocolate chips.
Fold an edge on a clean sheet of parchment.
Spread the chocolate all the way to the edge.
Place the peanut butter log then roll it up.
Put them back in the freezer for another 45mins.
Take out one at a time and slice into Bites.
Let the knife do the work so they don’t crack.
Place them in a Scarlet or Gray bowl and they are ready for the game!!
Make sure to keep them in the fridge until the game-time.
You can make them in advance and freeze them as well.
This recipe makes about 24 Bites depending on the size. There were quite a few missing because of some “quality control” by the boys. You can easily double for a party.
Even if you aren’t a Buckeye fan these are a tasty bite-size treat anyone can enjoy.
